We’ve grown up in a household where my mom would come home from work
looking for a quick meal to make. One of the items she’d reach for was a bag of
10-minute, boil-in-a-bag Success® rice

forward to now where Success® Rice is my go-to brand of rice to cook
for my family, especially after a long day at work. The Success® Jasmine Rice, the only boil-in-a-bag
Jasmine rice is a favorite amongst my family.
It goes great with many of the dishes I make, plain, or even with
ketchup. It has a buttery, nutty fragrance, silky, smooth grains and delivers
fully cooked rice in 10 minutes. But, best of all, the Success® Thai Jasmine rice makes a great dessert.

My favorite dessert is a nice warm S’more. It combines my love for
chocolate with my love for cookies and it balances the amount of sweetness,
especially if you make your own graham cookies.
I love finger foods and things that you can just pop in your mouth
with one or two bites.
These s’mores rice balls are my take on the savory Sicilian
Arancini, which are, stuffed rice balls, coated with breadcrumbs, then fried.
They are usually filled with meat, peas, and tomato sauce.
My take on the Sicilian classic is not savory but a decadent dessert
that has fluffy marshmallow spread, orange zest, and milk chocolate chips
coated in graham cracker crumbs then deep-fried. This gives your first bite that
subtle cinnamon crunch and a warm gooey filling.
Serve the S’mores Arancini using Success® Jasmine Rice with a
Raspberry glaze and enjoy!
S’mores Arancini Recipe
Canola Oil, for frying
Pam cooking Spray
2 Bags of Cooked Success®
Jasmine Boil-in-Bag Rice, Warm
Zest of an orange
¼ tsp Salt
1-Tablespoon Evaporated
Milk
1 tsp vanilla extract
2  Cups Marshmallow Fluff, reserve 1 cup
½ Cup Milk chocolate chips
½  Cup all-purpose flour
2 large eggs
1 ½ Cups Graham Cracker
crumbs
Raspberry Dipping Sauce
1 pint fresh raspberries
Zest of 1 lemon
1 ½ Cups of Water
½ cup sugar
Procedure
  1. Follow the cooking
    instructions for Success® Jasmine Boil-in-Bag Rice. Drain well making sure that
    all of the water has evaporated. Remove cooked rice from bag and place in a
    medium sized mixing bowl. Set aside.
  2. Place flour, eggs, and graham
    cracker crumbs in three shallow dishes; lightly beat eggs.
  3. Get a cookie sheet and
    spread with wax or parchment paper.
  4. Add the orange zest, salt,
    evaporated milk, and vanilla extract. Mix thoroughly.
  5. Next, fold in 1 Cup of the Marshmallow
    fluff and spread evenly on the prepared cookie sheet lined with parchment
    paper. Refrigerate for an hour or until it has set and has a sticky
    consistency.
  6. Heat canola oil to 350
    Degrees in a deep fryer or a pot.
  7. Spread the final cup of marshmallow fluff on top of the rice.
  8. This step is optional and
    if you have a blowtorch, lightly toast the rice and marshmallow to give your
    mixture that campfire taste.
  9. Take about 1 ½ to 2
    tablespoons of the rice mixture and place 1-2 chocolate chips in the middle of
    the rice and form a ball.
  10. Dredge each ball with
    flour, and then dip in eggs and coat in graham cracker crumbs. Transfer to a
    parchment-lined baking sheet.
  11. Refrigerate the balls for 30 min.
  12. Deep fry making sure to
    not overcrowd and cook until golden brown.
After eating a healthy meal, we really hope
