Mini me loves helping out in the kitchen.  She’s accustom to helping out her aunt cook, who is also a chef.  When the opportunity came for her to attend a children’s cooking class sponsored by PaperChef, North America’s highest quality brand of parchment paper, I just new she had to attend.  The class took place during my work hours, and thankfully my mom was able to bring mini me to the class, which took place at Freshmade NYC in SoHo.

The PaperChef children’s cooking class took place the day before Halloween, which meant the kids, ages 4-10, arrived in their costumes ready to create healthy, delicious, easy, fun and spooky Halloween treats like Witches Chicken “fingers” using PaperChef parchment paper.  
During the class, mini me helped make the Haloween Candy Bark by breaking up the pretzels for the bark.  Mini me had a great time cooking, and then eating the food they cooked during the class, especially the Halloween Candy Bark, which consisted of chocolate, m&m’s pretzels, candy corn, and raisins.   Mini me and Ava, the daughter of fellow mom blogger, Brown Girl Gumbo, had chocolate all over their hands and faces.  A mess, but they were having fun.
Unfortunately, I missed all of the cooking and preparation, but, I seemed to make it just in-time for the best part, eating.  There were crudite platters, plus the food items the children helped make, and the adults also had a wine table set up, which was a nice touch.  Every mom needs at least one glass of wine after a long day at work or with the kiddies.
I didn’t get a chance to try the Witches Chicken “Fingers, but the Apple Cinnamon Papillote with Cranberries (and vanilla ice cream) was delicious. I’ll share the recipe below.   I can’t wait to re-create the recipe at home with mini me, especially since we were able to get some PaperChef parchment paper products to take home with us.  The only thing I would change is to cut the sweetness, maybe by decreasing the honey.

Freshmade NYC is such a cool spot! The wall of books, the lounge area, the kitchen… everything! I’d definitely consider having mini me’s birthday party there.  
Apple Cinnamon Papillote with Cranberries
Apple Cinnamon Papillote with Cranberries Recipe 
Yield: 4 servings

Ingredients: 
4 medium-sized apples, fuji or gala
Dash of cinnamon powder
4 tablespoons blackberry jam
4 tablespoons honey
Dried cranberries
1 tablespoon brown sugar
Granola
Vanilla ice cream

Method: 

  1. Preheat oven to 400°F 
  2. Peel and core the apples, then slice into thin pieces. 
  3. Toss apples with honey. 
  4. On cutting board, lay in a circle, overlapping each other until all apple is used. 
  5. Open PaperChef Culinary Parchment Cooking Bag (one bag for each apple), lay flat on surface, and place 1 tablespoon of jam into the middle of the bag. 
  6. Carefully transfer the apple slices using a spatula or flat utensil on top of the jam in the bag. 
  7. Sprinkle a dash of cinnamon and 1 tablespoon sugar over top of the apple. 
  8. Finish by sprinkling with dried cranberries. 
  9. Close the bag by folding 3 times, crimping to seal. 
  10. Bake for 15 minutes. 
  11. Open bag carefully and serve with vanilla ice cream and granola.
