My oven doesn’t work, so while we’re waiting to purchase a
new range, I’ve gotten creative with my cooking.  While perusing the internet for stove top
recipes, I came across a recipe for a 30-minute stove top lasagna via Mealime.com, and of course, tweaked it to my liking.

Prior to trying the recipe, I was a bit skeptical on how it
would turn out, but after going through the motions, cooking it, and having my
daughter and husband taste it, it turned out to be a winner.  And yes, it did take 30-minutes (or less) to
cook.   After posting the finished
product on instagram, I was asked to post the recipe, so here goes.

Ingredients
No boil lasagna noodles (enough to cover two layers)
Trader Joe’s three cheese pasta sauce
1 lb 97% lean ground turkey meat
 1 tbsp Olive oil or
vegetable oil
Fresh Basil
2-3 cloves of garlic
1 tsp Italian seasoning
½ tsp crushed red pepper
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ cup tightly packed ricotta cheese
Instructions
1. Heat pan over medium heat.
2. Add   1 tbsp
Olive oil or vegetable oil to the heated pan, and swirl to coat the pan, and
then add the ground turkey.  Cook and
break apart with a spoon/spatula until brown.

3. Mince the garlic, and add along with the Italian seasoning,
and crushed red pepper to the browned turkey meat.  Stir with meat until fragrant – about 15-30
seconds.

4. Add half jar of Three Cheese pasta sauce to the meat and stir.  Let simmer for 2 minutes.

5. Remove half, and layer on top pieces of the
no boil lasagna noodles.

6. Add the
remaining half of the meat, ½ cup of mozzarella cheese, ¼ cup of Parmesan
cheese., and top with another layer of no boil lasagna noodles. 

7. Over the noodles, add the remaining Three Cheese Sauce,
mozzarella cheese, Parmesan cheese, and use a spoon to drop dollops of ricotta
cheese to the top of the lasagna.  Cover
pan with a lid and bring to a rapid simmer. 
Then reduce heat to maintain a simmer and cook until pasta noodles are
just tender, 10-15 minutes.

8. Meanwhile, wash
basil, pick off leaves, and slice crosswise into thin ribbons.

9. Finish off by sprinkling with basil ribbons.  Cover with lid and let pasta sit until cheese
is melted, about 4 minutes.
